Salsa Recipe

This is short and sweet and oh so yummy!  My one and only salsa recipe. Literally, the only recipe I have.  But if you like avocados and salsa ~ this is the only recipe you need.

6 tomatoes

3 avocados

1 bunch of green onions

salt

garlic powder

crushed red pepper (or tepin)

Chop tomatoes and add salt to taste and stir.  Chop and add avocados and green onions and stir well.  Add salt, garlic powder and pepper to taste. Stir and enjoy!  That’s it!  YUM!

There are many variations you can do.  We’ve added cilantro and bell peppers too and it’s all good.  I don’t think there is a wrong way to make this salsa.  Simple and delicious!

Hooray For 3-Minute Pizza

Hooray For 3-Minute Pizza

The only thing better than homemade pizza is homemade pizza that cooks in 3 minutes.  Yes, you heard me right!  Gone are the days when homemade pizza includes 10 minutes of precooking the crust along with another 15 minutes to cook the dog-gone thing ~ with prep and everything making it one hour.

 

 

My funny family loves to ask right after I get started~

“Is dinner ready?  It’s been 3 minutes!”  HA HA

Not quite ~ family ~ but soon ~ VERY SOON!

  • Before I get started, I want to say that it is very important that you get everything completely ready to make your pizza first before cooking (toppings, sauce, cheese, hot pads.)  It cooks hot and it cooks fast.  If your not ready you’ll be serving a very black and crispy pizza for dinner.  OK ~ I’m exaggerating ~ but still ~ be ready.

INGREDIENTS:


For the Crust~

1 cup warm water

1 Tablespoon (or packet) yeast

1 Tablespoon sugar

1 Tablespoon oil

1 teaspoon salt

3 cups flour


Pizza sauce (I don’t have an impressive recipe ~ sorry)

Mozzarella cheese

Favorite toppings (we like pepperoni, black olives, red, yellow, orange and green bell peppers, onions and jalapenos.)


DIRECTIONS:

Put oven on broil.  Get your cast iron pans hot on the stove by turning it on high for a few minutes.  If it starts to smoke ~ turn it down or off.

By the way:  I tried this recipe with my regular cookie sheet and it worked fine.  The bottom of the crust wasn’t as crispy but it was good just the same.

For the Crust~

~ Put water in a mixing bowl and sprinkle yeast on top.

~ Add sugar, oil and salt ~ whisk until dissolved.

~ Add flour.  Mix and knead well and set aside while you get the other ingredients ready.

~ Grate cheese, chop veggies, get toppings and sauce ready.

Double check to make sure everything is ready before starting the next process.  Clear the area of little munchkins and stay close while it’s cooking as it’s very hot and goes fast ~ THE BEST EVER ~ YAY!


OK ~ Here we go!

Divide the pizza crust according to how many pizzas you’re making.  Roll them out to fit in your pans.  Roll up the sides so the sauce will stay on the pizza and place on your hot cast iron pan.  Put crust in the oven for 30-60 seconds.  THE TIME MAY VARY SO WATCH CLOSELY UNTIL YOU KNOW HOW YOUR OVEN COOKS YOUR PIZZA.  

 

Add the goods ~ pizza sauce, cheese, toppings, then top with a little more cheese.  Cook on broil for 3-minutes and ENJOY!

Easy ~ Fast ~ Delicious ~ Amazing!

Chicken Noodle Soup

 

 

 

 

 

 

This time of year, when it’s miserable flu and cold season, there is nothing like healthy, delicious (and cheap haha) homemade chicken noodle soup to warm you up on cold winter days.

Anything can be added to this soup but the most important ingredients are:

GARLIC & CHICKEN WITH ITS JUICES

First, I start boiling the water, add canned chicken with the juice (I know it’s probably cheating but it works!) and I chop 3-10 cloves of garlic (depending on if we’re sick or how much time and garlic I have.)  Then I add chopped vegetables.  Carrots, celery, spinach, kale and broccoli are my favorites but you can add any kind you like.  I’ve even added canned mixed vegetables and it worked great.  Once the water starts to boil, I add the noodles.  I boil for 10 minutes or until the noodles are ready, then I add salt, pepper and garlic powder to taste.  That’s it!  Simple, delicious, healthy and inexpensive!

I serve this with crackers, chips, homemade bread or homemade tortillas. If someone in our family is sick or we’re trying to prevent illness, I always tell my kids to drink the broth first before adding crackers to the soup.  It has huge health benefits.

Ingredients:

pan of water

3-10 cloves of garlic

1 can of chicken with juice

chopped vegetables (carrots, celery, spinach, kale, broccoli etc.)

noodles (handful, and gluten free works too) (noodles are optional)

salt, pepper and garlic to taste

boil until noodles are done and enjoy!

Healthy Chocolate Chip Banana Muffins

This is one of our favorite recipes that I make ALL…THE…TIME.  I thought I’d post this recipe for Christmas.  It’s not really a Christmas recipe but it is kinda breakfast-y…so I’m doing it!

I’ve been known to throw a few vegetables in most of my cooking, and this one is no exception…but I’m not going to include vegetables in the recipe below.  Just a little hint on something I’ve been doing for years.  So, I may or may not add grated carrots, zucchini, broccoli or spinach to these muffins sometimes…SSHHH!

(This particular batch has no vegetables in it.)

There really is no special explanation.  Just mix, bake, eat, and if you’re like us…REPEAT!!

Easy peasy!

 

I found this recipe and modified it to satisfy my great chocolate addiction. So don’t be alarmed if you think it’s too much rich and gooey sweetness.  You can use half the chocolate it calls for…but that’s just insanity…I never go chintzy on chocolate!  I just add vegetables instead HAHA!!

ANYWAY…without further ado… MY RECIPE!

Chocolate Chip Banana Muffins

PreHeat oven to 350*

2 eggs (beat, or like my kids used to say…”beat ’em up”)

6 Tablespoons butter (softened, really soft!)

1 teaspoon vanilla (pure, not the imitation stuff!)

3-4 ripe bananas (it works if you only have 2 handy.)

3/4 cup sugar (I always use raw sugar or organic)

(Mix this really well before adding dry ingredients)

2 cups of flour (I use unbleached but you can use gluten free flour too!)

6 Tablespoons flaxseed (meal)

1 teaspoon salt

1 teaspoon baking soda

(Mix everything well before adding chocolate chips)

1-1/2 cups of chocolate chips (I use dark chocolate chips so I feel healthier, HA!)

Stir ~ fill muffin tins 3/4 full ~ bake 350* for 20-25 minutes ~ ENJOY!!

 

Mmmmmmmmmmm!
